Older thread but wanted to chime in for others who run into this. I was also facing this issue and I just used the component HD cables that come with the standard RCA cables with the xbox. I went into the settings of the xbox and changed the settings to 1080p. I don't know if it is truly 1080p because it is not an HDMI cable, but it sure does look good. I have not compared it to the HDMI conversion but I am guessing converting the signal would not get much of an improvement.

If anyone has ever compared the HDMI conversion to the component HD cables, I would be interested in hearing the results.
